New Love for My Crock Pot

My girlfriend and I were recently given a crock pot, and I think it's my new favorite cooking appliance!

For about a year and a half we have been in an apartment without a stove, so we have learned to make due with electric skillets and a convection toaster oven. But this sucker is a ton of fun to cook in! The only bummer is that we work from home, so we are constantly smelling the slow cooking goodness. But having a house that constantly smells like food is probably a First World Problem... So I won't complain too loudly.

Corn tortilla tacos have really become my go-to meal, I probably eat 4-8 corn tortillas a day. I varry how I make them and have actually developed a pretty diverse taco menu.

Time to catch up with my gluten free menu

SO it has been some time since I have updated, and I think it's about time I let you know where my arthritis and I sit.

I have completely removed wheat from my menu, and pretty much everything else is fair game, I eat it, and I enjoy it.

I will starting sending pics of what I am eating again, hopefully it will help inspire you with your menu!

Had some amazing Gluten Free pizza

And got a referral for a gluten free baker!

Creole Omelet and Homestyle Potatoes AuGratin

Dinner: chicken breast stuffed with brie and crabcakes

Breaklunch: NJ Cracker Barrel

Breakfast: Scrambled egg tacos

With a couple of XS

Breakfast: Huevos Rancheros

With some really spicy salsa verde.

Dinner: Nachos

Technically an appetizer with my Salad. Even the denny's nachos are better than any Mexican food I have had in new york! I am really looking forward to this move to CA!

Lunch: Sante Fe Grilled Chicken Salad

Alcohol: Red Trolley Ale

It looks like it is going to be an interesting food weekend in San Diego, at least I have avoided wheat so far!

The beer is alright, really yeasty. I am going to be satisfied with the one and go jump in the hotel pool!

Lunch: Jack in the Box Chicken Strips

Sounded like such a good idea on paper. I haven't eaten at a Jack in the box in 3-4 years, at least its one of the better fast food places. (Cheap too!)

Dinner: Meatballs

Breakfast: Chicken Hash

I heated and diced a leftover chicken breast in cream sauce, and then scrambled it with two eggs. It was very good!

The only thing I have to drink in the apartment right now is water, so I'm having water too .

Midnight Snack: Beer

At not quite midnight.

Lunch: Wings

I felt like trying out a fast food menu before our road trip. The 'actual meat' chicken nuggets were fine, once we are on the trip I will probably mostly eat salads and grilled sandwiches, no bun.

Side note; if you take a picture of your receipt at the counter and start typing on your PDA you get amazing service! The manager came up and hand delivered my nuggets and emphasized the word FRESH, heh, pretty sure he thought I was a secret shopper.
